Sunny's Quick Blueberry Pie

Quick Blueberry Pie
by Sunny

Hello to everybody! It's time for a new recipe, this one is really easy to make and doesn't take long at all.
My blog is growing by the day and that only motivates me to write and share more with all of you, keep stay tunned and Like my blog on facebook.

Requirements:

  • 250 grams of flower
  • 125 grams of butter (room temperature)
  • 1 teaspoon of salt
  • 2 spoons of water
  • 1 egg
  • 2 spoons of sugar
  • 400 grams of Blueberries (prefer fresh ones, not from a can/jar)
  • 1/2 teaspoon of cinnamon
  • 50ml of Rum (it's best if you have a red colored rum)
  • 1 lemon

Lets do this the quick way..

First take a bowl and put the egg in there and mix it with a mixer for about 1 minute.
Now add the flower, the salt, the water and the butter and mix this whole thing for another 3 minutes on higher speed.

The mixture above shall form into a firm but flexible dough. Take this dough with your hands and make 2 big snowballs out of it. Now put the balls of dough in the fridge for about 10 mintes.

In the meanwhile take another bowl and mix in there the sugar, the blueberries, the cinnamon, the rum and squeeze the lemon innit (so you only need the lemon juice).
Mix this whole thing by hand and let it sit for +-5 minutes.

Take the dough out of the fridge and put it on the table. Now try to flatten both balls into 2 very thin layers. (like pizza base but much thinner).

Take a baking form and butter it or lay some baking paper on it.
Carefully place the first layer of dough inside. Poor the blueberry mexture on it and cover it all with the second layer of dough.

Bake this for about 20-25 minutes on 200 degree celcius pre-heated oven.

Put the pie in the fridge to cool a bit and it's ready to serve. Feel free to decorate with whatever you like by choice.

Enjoy your blueberry pie!

Sunny's Another Strawberry Cake

Another Strawberry Cake
by Sunny

Hi to all! Happy New Year 2013!!
For all of you recovering from the holidays i am starting the new year with a lighter type of cake.

In order this cake to actually be light we are cutting down on some of the requirements to make it, please follow the recipe and you'll get amazing results as on the picture.

Requirements:

For the base
3 ready to go cake layers (the ones you can buy from the store/bakery)
4 cups of water
1 cup of sugar
40ml of any type of Liqour

For the glaze
200ml of bakery cream
200ml of regular cream
500gr of strawberries cut in half
8 spoons of sugar

Lets get this done..
Take the 4 cups of water and heat them up (not boiling!) and the sugar and the Liquor into it. Stear it up a few times. Let this cool off completely.
Take the 3 cake layers and sirup them with the sugary water you just made.

For the glaze you need to mix the bakery cream on high speed while slowly adding the regular cream and the 8 spoons of sugar. At the end you will have 1 thick creamy mixture, feel free to taste it with your finger to check if the sugar levels are good, if not you might add another spoon. Don't make it too sugary tho.

Put layer 1 then smear it with cream. Decorate strawberries all over it. Do the same with the second layer. At the end put the 3d and last layer ontop of the other 2 layers and smear the whole cake with cream. Decorate the top with the rest of the strawberries, you can also add other fruits if you have, like raspberries or banana.

Let the cake cool in the fridge for about 20 minutes before serving.

Enjoy your cake!
